'One of the popular street food recipes made using boiled white peas topped with all chaat ingredients. RAGDA CHAAT Ingredients 1 cup dried white peas, soaked for 8 hours and drained 4 tablespoons date and tamarind chutney 4 tablespoon mint and coriander chutney Salt to taste 2 medium onions, finely chopped 2 medium tomatoes, finely chopped 1 medium raw mango, finely chopped 1 teaspoon cumin powder 1 teaspoon chaat masala Mixed farsaan for topping Nylon sev for topping Finely chopped fresh coriander leaves for garnishing Method 1. Boil in three cups water with turmeric powder and salt in a pressure cooker till the pressure releases 3-4 times or till soft. 2. Open the lid when the pressure reduces completely. This is ragda. 3. To serve, put some of the ragda in each serving bowl, drizzle some of the tamarind and date chutney and green chutney in each bowl, sprinkle some of the cumin powder, salt and chaat masala. Top it up with farsaan and sev, sprinkle some more cumin powder and chaat masala. Garnish with coriander leaves and serve immediately.
